What does this PR do?

1. Move released Gems from the 2.0 placeholder to their engine release tags

Gem zips from 2409.0 onward were all uploaded to the 2.0 GitHub release, which was meant only as a placeholder for testing before a release. Each zip is rebuilt from its original source with the correct engine release tag in its download URL (2409.0 … 2605.0, backports to 2505.1). The URL is stored inside the zip's gem.json, so every SHA-256 changes. The 2.0 assets stay in place, so existing links keep working. A few entries now match the manifest inside their zip (copyFiles, compatible_engines). Before this change they failed o3de download validation. Pre-2409 versions stay on 2.0.

2. Cherry-pick of the 2605 intermediate release (#1092)

ROS2 4.3.0, SimulationInterfaces 2.2.1, ROS2Sensors 1.1.0 and TracyProfiler 1.1.0 are added to repo.json and gem.json, pointing to the 2605.0 release.

3. New versions for 2610

Every changed Gem requires o3de>=2.7.0 / o3de-sdk>=2.7.0 (compatible_engines), because of the engine API adjustments listed below. All zips point to the 2610.0 release.

How was this PR tested?

• All 79 zips for 2409.0–2605.0 are uploaded to their releases. Each GitHub asset digest matches repo.json, and each URL resolves. o3de download succeeds for a sample covering every tag.
• The 2610.0 zips pass the engine's download validation offline (SHA-256 and manifest). They will be uploaded once the 2610.0 release exists.
• A sample project builds against stabilization/26100, and all o3de-extras unit tests pass (122 passed, 1 skipped by design).
