feat!: Remove TimeStamp field from CoSERV query - #36

No actual code changes here. Just updating test data. There is an implicit update to the coserv-rs crate. However, since this crate is not version-managed yet, we continue to use the head commit of mainline. This repo does not use a Cargo.lock file, so consuming applications should ensure they use latest coserv-rs as well as veraison-apiclient. BREAKING CHANGE: If consuming this change into a client-side stack, ensure that the server is also updated to remove the TimeStamp from the Query object.
