docs: catch-up CHANGELOG + banners (4 + 6 June)#376

The vital docs all stopped at 2 June. This catches them up so a future session (after the maintenance pause) reads the real current state. - CHANGELOG.md: two narrative entries — 4 June (8-PR day: THI-234 admin analytics, THI-341 mobile nav + avatar menu, THI-344 editable display_name, THI-346 dropdown fix, THI-347 part 3 delete tickets + THI-334 root-cause) and 6 June (pre-pause audit + THI-342 mobile fix + the api/* untouched and THI-345/347 defer decisions). - docs/plan.md / docs/ROADMAP.md / docs/README.md: banner prepend with the 6 June + 4 June segments (FR/EN/FR), preserving the prior history chain.
