Add new configuration parameters including data disk spill, batch accumulate size, commit interval and async commit. Revise existing config descriptions, default values and parameter ranges to improve documentation accuracy and clarity.

Mark Paimon as supported in the supported databases table. Revise the Paimon documentation to reflect dual source/target support, add permission requirements, update connection setup instructions, and include additional usage notes.
