chore: upgrade default instance types from m5 to m6i - #32

Replace all m5.* instance type references with m6i.* (6th gen Intel) across tfvars, variables, modules, docs, and examples. m6i offers better price-performance and broader availability than m5 with no configuration changes required. Leaves m5zn, c5, and r5 families unchanged (different families). Co-authored-by: Cursor <cursoragent@cursor.com>
