ci: bump the composition test's substrate pin to v0.81.0 - #4

v0.75.0 was the first release with seedable task-completion (substrate#360).
v0.81.0 keeps that contract byte-identical -- verified by running the v0.81.0
emulator and replaying this test's exact calls: POST /v1/spawn/task-completion
with the same snake_case payload (task_id/exit_code/state/started_at/ended_at)
returns {"ok":true}, and the DELETE cleanup returns {"ok":true}.
It adds the S3 and error-code fidelity fixes the staging step exercises: S3 Range
and conditional reads (substrate#396, #397), x-amz-checksum-* verification
(#399), storage classes and CopyObject metadata directives (#398),
Content-Encoding surviving a multipart upload (#406), Invalid*ID.NotFound for
explicit EC2 IDs (#391), and symbolic Error.Code per service wire protocol
(#392).
