Create a new consistent sample codebase for Elysia + Speakeasy integration, based on the Train Travel API which gives a far more realistic domain and usage of features than the simple user examples before.
Sadly it's still on OpenAPI v3.0 as Elysia does not support v3.1 (yet elysiajs/elysia-openapi#343), but we do at least bump to latest versions of the packages used.
