SourdoughSovereign

Fermentation compliance and production tracking for small and mid-size bakeries operating across multiple kitchens.

SourdoughSovereign is an early-stage prototype built to manage the operational and regulatory overhead that comes with running a serious bread program at scale. It targets wholesale bakeries and multi-kitchen operations that need to track both fermentation health and compliance requirements in one place — rather than across a pile of spreadsheets and sticky notes.

Features

  • Track starter health metrics and bulk fermentation temperatures per production kitchen
  • Schedule and monitor proofing windows across locations
  • Log health department inspections with per-location records
  • Manage wholesale bakery licensing renewal timelines
  • Record allergen disclosures organized by shipping jurisdiction

Integrations

None yet.

Architecture

This is a single-codebase prototype scaffolded over a weekend. The application is structured around core domain concepts — starters, fermentation schedules, kitchens, and compliance records — without any production infrastructure in place. No external databases, licensing APIs, or regulatory data feeds are wired up at this stage.

Status

🧪 Early prototype / concept. Not production-ready.

This project was built quickly to explore whether the concept holds together. Core ideas are sketched out; expect rough edges, missing validations, and no real data persistence beyond what the prototype scaffolds.
