Removed

• coverlet.collector: Was added to test projects only; code coverage metrics are not used or relevant.
• Microsoft.Extensions.Logging.Console: Removed due to following build warning:

  0>osu.Server.Spectator.csproj: Warning NU1510 : PackageReference Microsoft.Extensions.Logging.Console will not be pruned. Consider removing this package from your dependencies, as it is likely unnecessary.
  

  I have tested full-stack that the app still logs to console after this removal.
