Update the flashing guide for the new Heltec modes
For users following the repository's manual-install path, these rows now advertise Ultimate BLE/Web/repeater modes, but FLASHING.md:21-31 still states that each Heltec release offers only BLE and native-USB images and provides no selection or onboarding guidance for the new Wi-Fi modes. Update that section with the new filenames/modes and any required Web companion or repeater setup so the release documentation is internally consistent.

Pins both source submodules to the exact Actions-built main commits, adds Ultimate BLE/Web/Repeater-Web profiles, retains stable BLE/USB, and updates the public build table. Local catalog verifier and diff check pass; all 24 public release assets were anonymously downloaded and hash/size verified.
