refactor: lazy load route dialog data

Summary

• move dialog open state to route owners for calendar, appointment, customer hair sales, and hair order detail pages
• enable dialog option queries only while the relevant dialog or modal is open
• add an architecture test preventing dialog option prefetches from route loaders
