Upgraded java version used in github actions from openjdk 21 to openjdk 25
Upgraded gradle to the newest version and fixed deprecated "afterSuite" that will be removed in next major upgrade. Upgraded pitest plugin to a version compatible with gradle 9. Bumped java version for compilation.

We want to be on the newest java LTS version. To achive this we needed to also upgrade our gradle and pitest.
Since I was doing upgrades, I also bumped the versions of our other dependencies.
