Updates the hardcoded stable-version references in the docs for the 5.1 release:
config.mjs): add av5.1entry pointing atStable_V5.1.download_and_install.md,index.md):Stable_V5.0→Stable_V5.1.Note: the Stable_V5.1 docs subdirectory won't exist on docs.qgroundcontrol.com until the Docs workflow runs on this branch — merging this PR (touches
docs/**) triggers that deploy.
