Automated write-back from auto-tag.yml: v0.6.127 was just released, and this PR records that version everywhere the sources carry one —

• [workspace.package].version in Cargo.toml (inherited by every crate)
• the workspace-member entries in Cargo.lock
• packaging/homebrew/stella.rb (build-from-source formula)
• CHANGELOG.md — whatever was under [Unreleased] now sits under [0.6.127]

The workflow dispatches the required ci checks onto this branch and merges once they're green (past GitHub's phantom action_required check suite for this GITHUB_TOKEN-authored PR — see #275); no action is needed unless the dispatched run fails.
