fix(deps): bump safe production dependencies from #588 - #597

Apply the five safe bumps from the production-dependencies group (lucide-react 1.61.0, @tanstack/react-virtual 3.14.22, docx 9.13.0, officeparser 8.2.0, zod 4.6.7) and pin @napi-rs/canvas to 1.0.11 through pnpm overrides so pdfjs-dist no longer re-resolves it to 1.0.13. The canvas and keyring bumps stay out: their desktop distribution evidence entries must be collected before either native binding can move.

@napi-rs/canvas1.0.13 has no desktop distribution evidence entry, so release packaging would recordnative_vendor_source_and_notice_materials_missing.@napi-rs/keyring2.1.2 requires updating the pinned version assertion inapps/desktop/tests/engine-secret-package.test.mjs.This PR takes the five safe bumps (lucide-react 1.61.0, @tanstack/react-virtual 3.14.22, docx 9.13.0, officeparser 8.2.0, zod 4.6.7) and pins
@napi-rs/canvasto 1.0.11 viapnpm.overrides, becausepdfjs-dist@6.2.108's optional dependency otherwise re-resolves canvas to 1.0.13 behind the direct pin.Validation:
