I think we talked past each other - please have another manual look at the other READMEs and maybe rather do the edits manually/QA the end result

Please run the generator once (check comment) - I think there might still be drift

This PR fixes the auto generation of the documentation by adding tags to exclude certain parts that they are not overwritten again by speakeasy.
