Description

Adds KubeStellar Console to a new Monitoring and Observability section.

KubeStellar Console is an open source AI-powered multi-cluster Kubernetes dashboard that DevOps teams use for:

  • Real-time observability across multi-cluster environments (edge and cloud)
  • CNCF project integrations: Argo, Kyverno, Prometheus, Grafana, Istio, Flux, and 20+ others
  • AI-guided cluster operations and troubleshooting
  • Multi-cluster management from a single dashboard
  • CNCF Sandbox project with active open source community

The repo didn't have a dedicated Monitoring/Observability section, so I've added one following the existing format (title + link + description).

Closing this in favour of #89 which targets the Cloud Computing section more precisely. Apologies for the duplicate submission.
