docs: regenerate README screenshots from live Docker stack - #101

Ran seed-demo-data.js + screenshot-admin.js against the live docker stack (nginx + mage-api + mysql). All 19 views captured as admin with realistic mock data injected via Playwright route interception. Co-Authored-By: Claude Sonnet 4.6 <noreply@anthropic.com>
Regenerate docs/screenshots from the Docker stack (mage-api + gateway) and document the capture workflow so future shots target the app instead of host port 80. Co-authored-by: Cursor <cursoragent@cursor.com>
