made variable_offset_PROBE default to 1 so z offsets are automatic by default, and added a note about the binary 1 and 0 settings.

@txt4nk have you tested this out and verified it sets the offset properly using the nozzle probe?
Although this would be less accurate, I would prefer this method if it is fully verified to work

for single filament types, it works well but I've found that its not as accurate with multiple filament types. I've got z offsets for each filament type and each plate I use, using cartographer models in conjunction with those settings.
