ci: point shared CI pins at gainratio/ci (same SHA) - #91

The shared CI repo moved hseshadr/ci -> gainratio/ci. Rewrite the Dagger module sources in dagger.json and the publish.yml lineage `module:` pin to github.com/gainratio/ci at the same commit a88866232e67, and flip the owner-pinning tests to gainratio.
