Move the public builds to ffmpeg-build 0.0.18, which removes maintained FFmpeg/dependency compatibility patches. Keep the existing 120 targets and both FFmpeg release families while matching their options to the verified native upstream capabilities.

  • Pin the native Fontconfig stack to 2.15.x, matching the unpatched build verification.
  • Omit VideoToolbox on Mac Catalyst and VMAF on Windows ARM64, where the previous support depended on implementation patches. Update the installation capability notes accordingly.
  • Pin every reusable builder workflow to the v0.0.18 release commit, df711faccfd4aaf3a93cb54a7968c5d2931d3579, and regenerate ffmpeg.lock with that published engine.

Validation: the published v0.0.18 CLI regenerated the lock and validated all 120 targets; actionlint and zizmor passed. The npm tarball matches the registry's SHA-512 and contains none of the eight deleted build helpers, eighteen deleted recipe files, maintained patches, replacement operations or symbol-rewrite helpers. Native library/platform and FFmpeg runtime verification is recorded in devenvy/ffmpeg-build#112 and devenvy/ffmpeg-build#117. The public release workflow builds and tests the new archives before publishing them; this PR does not claim that those archives already exist.
