Remove forced telemetry... And default to no telemetry

First off, thank you for putting this project together !
It's a fantastic idea and the UI looks great

While reading through the codebase, I noticed a few areas regarding the telemetry that could be adjusted to improve transparency and give users more control over their data
I've put together this PR to address those points

Changes included in this PR:

• Ensured telemetry is fully disabled when the user explicitly turns the setting off
• Changed the default telemetry state to false (making it opt-in)
• Removed base64 url obfuscation for telemetry server
• Added the data/ directory (used for persistent data in the default docker-compose.yaml) to .gitignore to prevent accidental commits
