chore: prepare rc.2 batching benchmark update

Summary

• Add QuickNet to the benchmark comparison suite.
• Consolidate benchmark output into benchmark-result.json.
• Remove old default/latency benchmark result files.
• Update benchmark docs for the single rc.2 benchmark control.
• Change reliable batching to use one reliable commit per frame by default.

Validation

• Ran Roblox Studio benchmark and updated benchmark result data.
• Checked QuickNet Rojo mapping with sourcemap.
• Ran Stylua/Selene checks for touched benchmark config and adapter files.
