What changes were proposed in this pull request?
Define and document Doris compatibility for the five Gravitino V3-native type families.
Nanosecond timestamps, Variant, Unknown/Null, Geometry, and Geography are rejected before DDL because the connector cannot currently prove a complete, recoverable mapping for each family.
Why are the changes needed?
Database-side type names alone are not sufficient when the connector cannot reconstruct the Gravitino type identity and parameters. Early rejection prevents silent coercion and partial creation.

Does this PR introduce any user-facing change?
Yes. Unsupported V3-native schemas fail deterministically before DDL.
