Held rather than merged: this is a major bump that does not compile.

error CS0200: Property or indexer 'IOpenApiMediaType.Example' cannot be assigned to -- it is read only
  shared/Cove.Extensions.Shared.Testing/Cove.Extensions.Shared.Testing.csproj

Microsoft.OpenApi 3 made IOpenApiMediaType.Example read-only and the shared test helper assigns to it,
so this needs a code change rather than a version bump. And because this library is what emits
wire/openapi.json, a major bump also needs the committed document regenerated and the diff reviewed —
the emit test compares the document to the shipped registrations, so a shape change upstream shows up
there rather than as a compile error.

Leaving open as a real piece of work. The other dependency updates went in via #223, #213 and #214.
