Documentation updates for the AEM CIF Core Components 2.18.8 release.
README.md: advertise 2.18.8 as the latest release in the System Requirements tableVERSIONS.md: add a 2.18.8 row to the historical system requirements tableSystem requirement values are unchanged from 2.18.4 (AEMaaCS Continual, AEM 6.5.18, CIF Add-On v2025.09.02.00, Adobe Commerce 2.4.2 ee, Java 11).
