Another account on the host now holds port 3001 (bound to every interface). With network_mode: host the app would collide with it, and update.sh's health check would be answered by that service instead — a false success.

Moves the app to 3002 everywhere the port appears: docker-compose.yml, update.sh (HEALTH_URL), both nginx variants, the Dockerfile's default command, and INSTALL.md, which now says why. docs/DEPLOY-LINUX.md's 3001 is the phase-1 example and is untouched.

Needed to deploy the try page (#22).

Another account on studio.visualtext.org's host now runs a service on 3001,
bound to every interface. The app runs with network_mode: host, so it would
have collided with it -- and the health check in update.sh would have been
answered by that service instead, looking like success.

That service is not this deployment's to move, so the app moves: the
compose command, update.sh's health check, both nginx variants, the image's
default command, and INSTALL.md, which now says why.
