Using CoolTerm
CoolTerm is a nice serial monitor that I use and let's you capture data really well.

I took all these screenshots on a Mac but it should be transferable to other platforms.
These are the changes I usually make when opening a new capture for the first time.
To start a capture go to the menu shown and click start, when you are done capturing make sure to go back and click stop to make sure that all data is saved to the file.
