Refactor container users and update documentation

Renamed the container user from appuser to proxy in both Python and PowerShell Containerfiles for clarity. Updated the FastAPI application version to "HEAD" in python/app/main.py. Standardized documentation to use consistent image names (asksage-openai-proxy-python and asksage-openai-proxy-powershell) and ensured instructions are clear and usable.
