Changes: - Update base image to latest Ubuntu - Set Default listener to anycast - Include default PORT which is configurable - Set default entrypoint to the daemon so flags can be passed as args `COMMAND []`

Changed routing to root so one just hits the host without needing to append /demo
Migrated to python 3.11 and alpine 3.18. No one should be using a 2Gb desktop distro for containers.
Changes: - Bumped to latest wave version - Removed unnecessary run steps - Made /opt/wave default to respect filesys standards
