Replaces public IBKR-shaped test/example identifiers with explicit non-production values.
Also changes the public strategy configuration example to PAPER and dry-run defaults, so copying the template cannot enable live execution by default.
Validation:
uv run --frozen --extra dev pytest -q tests/test_ibkr_execution.py tests/test_ibkr_portfolio.py(9 passed).
