### Japan

#### Ramen

Ramen is a Japanese noodle soup dish that has evolved from Chinese wheat noodles into one of Japan's most beloved comfort foods. A bowl of ramen features wheat noodles served in a rich, carefully crafted broth — the most common styles are shōyu (soy sauce), miso, shio (salt), and tonkotsu (pork bone). Each region of Japan has its own signature variation: Sapporo is known for hearty miso ramen topped with corn and butter, Hakata for its creamy white tonkotsu, and Tokyo for a lighter shōyu broth.

Toppings typically include chashu (braised pork belly), soft-boiled marinated eggs (ajitsuke tamago), nori seaweed, bamboo shoots (menma), and green onions. Ramen shops (ramen-ya) are found on nearly every street corner in Japan, and many have cult followings with lines stretching around the block.

While instant ramen was invented in 1958 by Momofuku Ando and spread globally, authentic shop-made ramen broth is simmered for many hours — sometimes overnight — to achieve its depth of flavor.
