DOCS Replace references to the old GitHub org - #8471

This updates references to the old GitHub organisation with the new organisation. Only changes public places in the project. For example there are many links in the tests that refer to issues in the old org.

This updates references to the old GitHub organisation with the new organisation.
Only changes (semi-)public places in the project. For example, there remain many links in the tests that refer to issues in the old org. This is fine as GitHub will keep redirecting links to the new organisation. Equally I did not update all the links in the change log.
One thing that should be updated at a later point:
.github/workflows/new-issues-to-triage-projects.ymlrefers to GitHub projects that have not been moved yet.Towards #8470
