update status of studies in case-studies README

What is the feature?

• Update table of stocks in the README to show which ones are working and which aren't inspired by comment from @e-perl-NOAA during today's implementation team meeting. Note: we could also expand the table to provide additional information on each stock, or we could shrink the table to remove the stocks which are not working right now.

How have you implemented the solution?

• Compared the table in README with active pages on github.io (along with ongoing PR for Opakapaka Update Opakapaka case study and add back to github.io page #101)

Does the PR impact any other area of the project, maybe another repo?

@iantaylor-NOAA thanks for this PR but @e-perl-NOAA already has an open PR for the README where she is rendering the table a bit more dynamically. Perhaps you can review her PR #104?
