Document "Leave organization" for non-admin members

Added a new Leaving an organization section to docs/inspector/projects.mdx to document the self-service leave flow introduced by this PR. Non-admin/owner members who open organization settings now see an Access restricted screen with a Leave organization button, and this section explains how to use it and what to expect.
