update the digest-pinned Nginx Alpine image from 1.27 to the maintained 1.31 line
use the multi-architecture digest verified against Docker Hub
prepare patch release v1.0.3

Verification

Docker Hub manifest digest confirmed
npm run format:check
npm run check:docs
npm run build
full protected CI required before merge
