The star history chart was broken because the previous service could no longer render charts due to GitHub stargazer API restrictions. Point the chart to a working mirror and use the new domain for the wrapping link.

The star history chart at the bottom of the README is currently broken because the previous provider could no longer fetch the data it needs due to GitHub stargazer API restrictions. This PR switches the chart to a working mirror so the chart renders again. The chart now also links to the new history page instead of the old one.
