docs: localize cognito-backend READMEs to Spanish and Catalan - #16

Fully localizes the remaining English sections of README.md (Spanish) and README.ca.md (Catalan) under very-simplified-stack/cognito-backend/ to their respective target languages, ensuring perfect localization and locale consistency.
