[Enhancement]: `Pause` method on testcontainer object

Proposal

We have a set of tests that asserts that if a datastore container pauses, connections to it don't just hang open and waiting. We've written the test to get a handle on the cli and then invoke the pause there, but it'd be nice if it was just on the container.
