There isn’t a hidden iOS trick here. In v1.5.0, the Add button is disabled when the selected database entry is missing any one of these values: calories, carbohydrates, fat, or protein. When that happens, the screen displays “Product missing required kcal or macronutrients information.” If you see that message, that’s why those particular entries can’t be added.

For a reusable workaround, open Recipes → + → New Custom Food, enter the nutrition information, and save it. Custom foods are included in future searches, so you won’t need to recreate the entry each time. Quick Add only records that individual diary entry; it doesn’t save a reusable custom food.
