Issues in thumbnail notifications upgrades in iOS 26

We need to use [UNNotificationServiceExtension](https://developer.apple.com/documentation/usernotifications/unnotificationserviceextension) to properly upgrade a thumbnail on iOS. Right now, iOS 26 doesn't allow the app to run in the background to download the thumbnail and upgrade the notification.
