Add Amazon EKS support

InfraSpec needs to support Amazon EKS in it's aws packages.

Requirements

• Ensure the appropriate steps and assertions are available.
• Add the relevant examples and feature specs.
• Ensure the example Terraform configurations are using the open source terraform-aws-eks module.
• Add a new test(s) to test the code and features.

Implemented EKS Assertions: Added comprehensive EKS support with 8 assertion types:

• Cluster existence, status, and version checking
• Node group existence and status validation
• Endpoint access configuration validation
• Logging configuration validation
• VPC/subnet configuration validation

Implemented EKS Step Definitions: Added Gherkin steps for all assertions with proper type conversion for EKS enums and parsing for complex inputs.

Note on Setup ⚠️

I don't have permission to run bash commands like make deps, but I can proceed with implementing the code changes. You may need to run make deps, make go-test-cover, make fmt, and make lint manually after I complete the implementation.
