[Documentation] Readme - the tape shows `oc` but the readme refers to `occo`

## What happened

The commands shown in the tape on top of the README.md are using `oc` as an alias.
The documentation calls the tool with `occo`. 

## Proposed solution

Re-tape the cli usage using the alias of `occo`.
