Update repo packages & practices

The repo's dependencies and practices haven't been updated in some time. It would be good to get them up to date (e.g. use the latest version of credo)

Implementation is up as a stack of five PRs (each builds on the previous; merge in order):

1. chore: replace Rush with pnpm workspaces and move to Node 22 #58 — Rush → pnpm workspaces, Node 18 → 22, CI/Docker modernization
2. chore: TypeScript 5.9 (nodenext), NestJS 11, Jest 30 #59 — TypeScript 5.9 (nodenext), NestJS 11 (Express 5), Jest 30
3. chore: ESLint 10 flat config and Prettier 3 #60 — ESLint 10 flat config, Prettier 3
4. feat: migrate Credo 0.5 to 0.7 #61 — Credo 0.5 → 0.7 (new KMS API, OWF askar bindings, Node 24)
5. docs: align key export/import tutorial with actual API responses #62 — docs alignment

Deliberately deferred (candidates for follow-up issues)

• @sphereon/pex 1.1.3 → 5.x — used in 11+ files; the latest major is a substantial API change and deserves its own migration
• typeorm 0.3 → 1.0 — new major released; 0.3.x still supported by @nestjs/typeorm 11
• @spruceid/didkit-wasm-node — old dependency of the did library's did:ethr path
• jose v4 → v6 — ESM-only; now unblocked by the Node 24 / nodenext work
• Renaming the @energyweb package scope — packages are unpublished, so the scope is cosmetic, but worth deciding as a project
• Dependency-update automation — decided against for now; if wanted later, Renovate (or Dependabot, now that Rush is gone) works with the pnpm workspace layout
• Duplicate ExchangeResponseDto class name (exchanges vs workflows modules) — @nestjs/swagger 11 warns; becomes an error in swagger v12
• credo-ts#2038 — still reproducible on Credo 0.7; the repo carries a small pnpm patch (patches/@credo-ts__core@0.7.0.patch) that can be dropped once fixed upstream
