[Enhancement] Add org profile README at profile/README.md

Summary

Create profile/README.md to serve as the Open Lobotomy org landing page at https://github.com/open-lobotomy.

Why

GitHub renders profile/README.md from the .github repo as the org's public face. Currently there is no landing content — visitors see only the repo list with no context.

Acceptance Criteria

• profile/README.md exists
• Introduces Open Lobotomy (Lobotomy Corporation modding org)
• Links to the main repos: lobotomy-corporation-mods, open-lobotomy-tooling
• Brief "what is this org" + "how to get involved" framing
• Renders correctly at github.com/open-lobotomy
