docs: fix the Insights handbook clip — scroll-through instead of the loading skeleton

The first take captured the loading skeleton and empty space (it started
recording before the data arrived), which read as broken. Re-recorded as a
smooth scroll down the loaded page — tiles → approval health → Bradford →
utilisation → liability — so every section is shown with real data.
