Expand README/usage docs

Add a Docker section (once the Dockerfile issue lands), troubleshooting notes, and an example Claude Desktop/Code MCP server config entry alongside the existing setup steps.

Status update: partially done. The README's Claude Code/Claude Desktop/LM Studio config examples this issue asked for already exist (see 'Configure Claude Code, Claude Desktop, or LM Studio'). Still open: a Docker section (blocked on #8/#14 landing first) and troubleshooting notes, neither of which exist yet.

Progress note, not closing this yet since it's broader than one change: get_activity_summary now also returns floorsClimbed, activeEnergyBurnedKcal, sedentaryMinutes, and caloriesInHeartRateZoneKcal alongside the existing fields (commit abe01b7, pending push). README's tool table updated to match.

Sorry, my previous comment here was posted to the wrong issue — it's unrelated to this issue's actual scope (Docker section / troubleshooting / example config in the README). No dedicated GitHub issue tracked the floors/active-energy/sedentary/calories-in-HR-zone work; it was only noted as deferred in CLAUDE.md's status log, now done in commit abe01b7 (pushed).
