Offer more choice, without letting users make stupid keyboard shortcuts that won't work (like "L" with no modifier). I recommend taking inspiration from Rectangle, I remember that being intuitive.
Also, for discoverability: maybe the drop-down in the icon in the menu bar should remind the user what the keyboard shortcut is. Selecting the entry with the keyboard shortcut should remind the user how to use it (press the shortcut, start talking, press again to stop) .
