Rename project to kolide/fleet-quickstart

There may be unforeseen consequences of this move, so we should thoroughly test and rename it when we feel confident.

I initially had started this project from the default clone directory, "kolide-quickstart". That repeatedly prevented the created network from being found due in part to the truncate call in the demo.sh script. When I changed the dir name to just "quickstart", the network was created and the containers found it.
