Update Copyright information in emails to reflect the current year

Current behavior
The current email templates are using hard coded values for year e.g. this line

To Reproduce
Steps to reproduce the behavior:

1. Go to User Registration
2. Enter user details
3. Click signup
4. Check confirmation email that is sent to user from step 2
5. Copyright year has been hard coded to read 2021

Expected behavior
Copyright information should include the current year
